A girl’s best friend: chocolate
Or better yet: A WHOLE PIE!!
I made the Velvet Chocolate Cheesecake for FreezeM at his birthday April 10th. Everybody enjoyed it so much I thought I’d share. The recipe comes from “Best loved recipes of all time”.
Baking cakes is something I started with after our trip to New York. I’ll never ever forget that first piece of cheesecake in the fancy coffee bar on Times Square. Hmmm…

Ingredients Velvet Chocolate Cheesecake
10 servings
• 20 Chips Ahoy! Chocolate Chip Cookies, divided
• ¼ cup margarine or butter melted
• 1 1/3 cup sugar, divided
• 2 (8-ounce) packages (Philadelphia Cream Cheese, softened)
• 1/3 cup unsweetened cocoa
• 2 eggs
• 1 ½ teaspoons vanilla extract divided
• 1 cup Breakstone’s or Knudsen sour cream
• Cool Whip Whipped Topping (In Dutch: gewoon slagroom!)
• Maraschino cherries for garnish or as I used, many many strawberries
For Dutchies wanting to try this, here’s a handy conversion chart for ounces to grams.
1. Finely crush 20 cookies. Mix cookie crumbs and margarine or butter; press onto bottom of 8-inch springform pan. Stand remaining cookies around side of the pan; set aside

2. Reserve 2 tablespoons sugar. Beat cream cheese in medium bowl with electric mixer at medium speed until creamy; beat in remaining sugar, cocoa, eggs and 1 teaspoon vanilla until fluffy. Pour into prepared crust. Cover tops of cookies with band of aluminium foil before baking to avoid overbrowning.

3. Bake 375F (= 190 graden celcius!) for 50 minutes or until cheesecake is puffed and toothpick inserted ½ inch from edge comes out clean; remove from oven.
4. Blend reserved sugar, sour cream and remaining vanilla; spread evenly over cheesecake. Return to oven; bake 10 minutes more. Cool completely at room temperature. Refrigerate for 3 hours or overnight. Remove side of pan. Garnish with whipped topping and maraschino cherries if desired.

High Tea
I'm yearning for a cup of tea with milk & sugar. Call me crazy if you will...

My first lemonade!!!!
It's so hot!!! Let's make some fresh lemonade :) In The Netherlands lemonade is not a known drink. We know coca cola, fanta, sprite, ice tea etc. but fresh lemonade is never made.
But this sweet Dutchie LOVES fresh lemonade and here's my simple recipe:
Ingredients (for 4 glasses)
4 lemons (save 1 lemon for decoration)
6 tablespoons sugar
4 cups water
lots of ice

Cut 3 lemons in half & squeeze them. Remove the seeds (they're not nice to eat). Pour into serving pitcher (As I'm Dutch, I only have a Heineken pitcher :). Add the sugar, and let it stand awhile (so the sugar to dissolves). Stir a couple of times.

When the sugar is dissolved, add the water and stir again. Serve it over o lot of ice & a slice of lemon for decoration :)
